Maple-Dijon Pork Loin Recipe

Tender pork loin coated in maple syrup and tangy Dijon mustard.

  1. Preheat oven to 425°F.
  2. Rub the pork loin with ¾ tsp. salt and ½ tsp. pepper and allow to sit at room temperature while
    the oven preheats.
  3. In an oven safe skillet, heat the oil over med-high heat for 2 minutes.
  4. Place the pork loin in the hot skillet and sear one side for 2 minutes.
  5. Using tongs, hold the pork loin to sear the thin sides, about 1-2 minutes total.
  6. Sear the remaining flat side for 2 minutes.
  7. Transfer the pan to the oven and bake for 15-25 minutes or until the internal temperature
    reaches 145°F. The time will vary based on the starting temperature of your pork loin and the
    thickness.
  8. When done, transfer the pork to a cutting board and allow it to rest while you prepare the
    sauce.
  9. Place the skillet back on the stovetop and turn on medium heat.
  10. Carefully, add the vinegar and using a whisk, scrape the browned bits from the pork from the
    bottom of the pan, about 30 seconds.
  11. Add the syrup and mustard and whisk to incorporate.
  12. Bring to a boil, then immediately reduce heat and simmer for 5 minutes.
  13. Slice pork and serve with sauce.
