Maple Walnut Blueberry Muffins 
 
INGREDIENTS:
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 tablespoon Maple powder
  • 1/4 cup Maple Syrup
  • 1 stick butter, melted
  • 1/4 cup milk
  • 2 beaten eggs
  • 1 1/2 cups  blueberries
  • 1/4 cup chopped walnuts
DIRECTIONS:
In a large bowl, mix together the flour, baking powder and Maple powder. Set aside.

Spray a glass measuring cup with cooking spray. Measure the Maple Syrup into the cup. Add the stick of butter. Put in the microwave, on high for about 1 minute, watching carefully. When the butter is mostly melted, remove from microwave and stir butter until it finishes melting in the syrup. Add the milk. Add the Syrup/butter mixture to the flour mixture and add the two beaten eggs. Mix well. Fold in the blueberries and chopped walnuts. Spray muffin tin and baking spray. Fill 2/3 full.

Baked at 375F for 20-25 minutes or until they test done. Cool in pan for 10 minutes before removing to cooling rack.
 
YIELD:  1 Dozen Muffins
