Maple Glazed Yams |

INGREDIENTS: |
- 1 - 1 1/2 pounds yams
- 1/4 cup Maple Syrup
- 4 tablespoons dill butter
- 2 sticks (8 ounces) unsalted butter, softened
- 1 tablespoon orange juice or juice of 1 lemon or lime
- 1 tablespoon dried dill weed

DIRECTIONS: |
Dill Butter Directions Mix the butter, orange juice and dill weed in a blender or with a hand mixer (using a medium bowl). Scrape butter from sides of blender container or mixing bowl. Place butter on a sheet of wax paper and roll up to make a cylinder or log. Wrap with plastic wrap and store in the refrigerator.
Yam Directions Preheat the oven to 350ºF. Peel the yams and cut into bite-size cubes. Place the yams in an oven safe 12-inch skillet or saute pan with an oven safe cover. Top yams with the maple syrup, dill butter and lime juice. Sprinkle a pinch of salt, black pepper and white pepper over the yams. Mix with a spoon. Bake covered 45 minutes to 1 hour or until the diced yams are soft. Remove the yams from the oven and place the skillet on one of the burners on your stove. Turn heat to medium to medium-low heat until any liquid evaporates. Liquid will evaporate and form a sauce to glaze the yams. Serve |
