Gluten Free Banana Bread 
 
INGREDIENTS:
  • 3 Cups Gluten Free All Purpose Baking Mix
  • 4 Eggs
  • 1/3 Cup of Milk
  • 4-5 Mashed, Ripe Bananas
  • 1/2 Cup White Sugar
  • 1/3 Cup Brown Sugar
  • 1/3 Cup Oil
  • 1 tsp. Vanilla Extract
  • 1/2 tsp. Cinnamon
  • 1/2 cup Chopped Nuts, if desired
DIRECTIONS:
Pour Baking Mix into large bowl. In a separate bowl, whisk the eggs, milk, bananas, sugar, oil, vanilla, cinnamon and nuts (if using). Stir into Baking Mix just until moistened.

Transfer to two 8-in. x 4-in. loaf pans coated with baking spray. Bake at 350 for 45-55 minutes or until a toothpick inserted near the center comes out clean.

Cool for 10 minutes before removing from pans to wire racks.
