Fat-free Banana Pudding Muffins 
 
INGREDIENTS:
  • 2 medium sized very ripe banana, mushed
  • 2 medium eggs, slightly beaten
  • 1/2 cup brown sugar
  • 1 cup fat free plain yogurt
  • 1 1/2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/3 - 1/2 cup Maple Syrup, warmed
DIRECTIONS:
Set the oven at 400F. Grease muffin cups.

Mix banana, eggs, sugar and yogurt well in a medium bowl.

Mix flour, baking powder, cinnamon well in a large bowl, mix in the wet mixture.

Pour the batter in muffin cups evenly.

Bake for about 25 minutes until a wooden stick inserted comes out clean.

Take out from the oven. While they are still warm, poke about 8 holes with a wooden stick and pour warmed maple syrup evenly. Cover slightly with foil.
