Crepes 
 
INGREDIENTS:
  • 1 Cup Gluten Free All Purpose Baking Mix
  • 2 Eggs, at room temperature
  • 1 1/4 Cup Milk
  • 2 Tbps Butter, melted and cooled
  • 3/4 Tsp Vanilla Extract
DIRECTIONS:
Preheat griddle to 375 degrees. (Or use crepe pan over medium heat). Spray surface with non stick cooking spray.

Blend together in a mixing bowl, milk, eggs and melted/cooled butter. Whisk until very well incorporated. Add Mix and vanilla. Beat well. Some clumps will form, but keep whisking until they blend in.

Pour batter on griddle, by 1/4 cupfuls, forming very thin 8” circles. Cook approximately 1 minute. Lift edge and check underside. When lightly browned flip and cook another 45-60 seconds. Re spray griddle or skillet before making next crepe. Fill with berries, fruit, chocolate, whipped cream, as you desire. Roll up and sprinkle with confectioner’s sugar.
 
YIELD:  10 Crepes
