Balsamic Chicken Pasta Salad 
 
INGREDIENTS:
  • 1 boneless, skinless chicken breast
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 8 oz small shell pasta
  • 1/4 cup diced red pepper
  • 1/4 cup diced red onion
  • 1/2 cup fresh or frozen peas
  • 1 1/2 cups  Maple Grove Farms Balsamic Vinaigrette salad dressing
DIRECTIONS:
Marinate chicken breast in 1/2 cup Maple Grove Farms Balsamic Vinaigrette salad dressing for at least 1 hour. Grill or boil chicken. Cut into bite sized pieces. Cook pasta according to package directions. Drain and rinse with cold water.

In a large bowl, combine all ingredients except cheese. Chill for at least 1-2 hours. Before serving stir salad and top with grated cheese. Garnish with fresh basil, if desired.
 
YIELD:  Serves 4
