Sensational Sesame Noodle Salad 
 
INGREDIENTS:
  • 1/3 cup All Natural Sesame Ginger Dressing
  • 1/3 cup smooth peanut butter
  • 1/4 cup warm water
  • 3/4 lb. dried spaghetti or soba noodles
  • 4 scallions, thinly sliced
  • 1 red bell pepper, cut into 1/8 inch thick strips
  • 2 carrots, peeled and coarsely grated
  • 3 tablespoons sesame seeds
  • 2 tablespoons soy sauce
DIRECTIONS:
Make dressing. Combine all dressing ingredients, blend well.

Cook pasta according to package directions. Drain in a colander, then rinse well under cold water.

Add pasta, scallions, bell peppers, carrots and sesame seeds to dressing, tossing to combine and serve immediately.
 
YIELD:  Makes 6 side-dish or 4 vegetarian main-course servings.
